Oh my Jack! There is not much that you will eat these days. You used to eat everything I offered. Since then you have eliminated every single food until now we just have a handful. I hope and pray this will get easier for you! You want to eat it, like tonight we were having salad and you were so excited! You sat down, put it in your mouth and you just couldn’t do it! You love to cook everything with me and the whole time we are cooking, you are so excited to eat it saying “I love spaghetti” or whatever it happens to be. Right now you do really love your smoothies (which are packed full of all that you need, luckily) and fruit! So when I see you eating anything new, I get so excited. Even cookies!
Here is the recipe that we made together that you just loved, but are safe for your tummy. They were AMAZING!
Chocolate Chip Cookies
¼ cup ghee (or butter if you can have dairy)
¼ cup coconut palm sugar or sugar
2 tablespoons honey
1 large egg, room temperature
2 teaspoons vanilla
1½ cups blanched almond flour
2 tablespoons coconut flour
½ teaspoon baking soda
½ teaspoon sea salt
½ cup enjoy life chocolate chips (dairy and caesin free)
Preheat oven to 350 degrees F. In a food processor, cream the ghee or butter, sugar, honey, egg, and vanilla for about 15 seconds until smooth and fluffy. Add the almond flour, coconut flour, (if you used ghee like me, I add 2 TBS of GF Oats to the mix at this point to since ghee is thinner) baking soda and sea salt and mix again until combined, about 30 seconds. Scrape down the sides of the bowl if needed in order to incorporate all of the flour. Pulse once or twice more. Stir in the chocolate chips by hand. Place golf-ball sized balls of dough on a cookie sheet lined with parchment.The cookies don’t spread much so create the size and thickness you want prior to baking them. Bake for 9-12 minutes, until slightly golden around the edges.
