You have been my little sous-chef. Everytime I go into the kitchen to cook you run behind me and ask, can I help? It has been wonderful. Last night we made chicken and corn chowder together and this morning we made pan-a-cakes. As you would say. You proudly told me, we need to mix the ingredients and make something yummy. Then later you told me I make delicious food with my “inventions” in the kitchen. You really are a help. You love to fetch ingredients and mix things together!

You ate five pancakes and loved them so much you asked for them all day long! We have a nice treat waiting for us in the morning, you will be so excited. Here is the recipe we made together…

Pan-a-cakes (GLUTEN AND CASEIN FREE but just as yummy)

1.5 cups of oatmeal (gluten free)

1.5 cups of sliced almonds

1 teaspoon baking soda

1 teaspoon baking powder

1 heaping teaspoon cacoa powder (you can use cocoa if you like)

2 eggs

1.5 teaspoon of vanilla

1/4 cup sweetner (you can use sugar or 1/8 cup honey)

1/4 cup olive oil

1 1/4 cup water

Heat your griddle to 275 degrees . Add all ingredients into the vitamix blender and work your way to 10 and blend for 2 minutes until the mixture is nice and smooth. Drop onto skillet using a 1/4 cup (we use an ice cream scooper) and flip once they become bubbly. Makes 12-15 pancakes.

We eat ours without syrup but if you would enjoy syrup you could omit the sweetner above.

(If you do not have a vitamix you can blend the dry ingredients first until they are a fine powder and dump them into a small bowl. Then mix all wet ingredients until they are creamy. Mix the wet to the dry ingredients and cook away. )
